The Griffin is located in the village of Danbury Essex, on the main road between Chelmsford and Maldon, perched at the very summit of Danbury Mount, a high saddle of land between Chelmsford and Maldon. This enchanting, 16th Century, oak box framed building is remarkably well preserved, and has many original features such as the wooden beams, three open log burning fireplaces and beautiful carvings which are thought to come from the local church! The view from the lounge and garden, over broad-leaved forest, is stunning, and this beautiful countryside is justly popular with ramblers, many of whom use The Griffin as their meeting point.

Tastefully decorated inside and out, this destination food house is something very special. People come from near and far to choose a meal from the main menu or one of the specials prepared by our Chefs to show their flair! At The Griffin, food is as important as beer, the wine stock is equally well chosen, whilst a conducive environment adds the finishing touch.

Along with the local regulars and travelling visitors we attract a number of ramblers too. In a nutshell this is pub which gives a relaxed dining experience with a style of food, wine and cask ales which befits the safe, comfortable atmosphere which is The Griffin.

We are looking for a sous chef:

The culinary chef position of sous chef comes with a great deal of responsibility. Reporting directly to the Head chef, the successful sous chef will quickly amass an in-depth familiarity with the kitchen’s operations so that they may fill in for the Head chef when needed and assist them in resolving any problems that may arise on the job.

The successful sous chef must possess the ability to quickly and authoritatively delegate job tasks to a large staff. They must also be able to draw upon their considerable experience as a culinary chef who has worked in many different roles and settings in order to effectively coach and mentor junior chefs.

Duties and Responsibilities

Essentially, the sous chef is responsible for planning and directing food preparation in a kitchen. This will involve a large degree of supervising other kitchen staff, as well as keeping an eye out for problems that arise in the kitchen and seizing control of a situation at a moment’s notice. The sous chef may also need to effectively discipline underperforming staff members, as well as provide incentives for staff members to go above and beyond the expectations of their particular chef roles.

Outside of the kitchen, the sous chef may be responsible for staff scheduling and, depending on the experience, may even have a hand in apprenticeship development schemes as well. A large portion of the sous chef’s duties, however, are administrative, sometimes taking up to a quarter of his or her work hours. Ordering food and dealing with suppliers.
